Chef's Notes
Do not rush the tempering stage! Letting the mustard seeds crackle fully releases essential oils that form the aromatic backbone of this entire masterpiece.
Pro Tip
Always drop your shaped urad dal batter into medium-hot oil rather than smoking hot oil; otherwise, the outside will burn while the inside remains raw dough.
Kitchen Catastrophe Warning
If your oil is not hot enough when dropping the vada batter, your fritters will act like sponges, absorbing every drop of oil until you are left with heavy, soggy greaseballs instead of crispy clouds.
The Jester's Corner
Royal Court Comedy
The jester finds it hilarious that you spend hours frying a perfectly crispy vada only to immediately drown it in soup until it becomes soft again.
The Culinary Science
Soaking urad dal allows proteins to absorb water and unfold, which traps air bubbles during the whipping process and creates that impossibly fluffy, cloud-like interior in your vadas.
