Chef's Notes
Do not skip soaking the bread in the onion juice; that is the secret weapon for keeping these meatballs exceptionally moist and tender.
Pro Tip
Keep a small bowl of cold water nearby to wet your hands before rolling the meatballs. It stops the sticky meat mixture from clinging to your palms!
Kitchen Catastrophe Warning
If you dump all the cold broth into the flour and butter mixture at once, you will create an lumpy wallpaper paste that no amount of whisking can save.
The Jester's Corner
Royal Court Comedy
I suppose if you can't find the missing Allen wrench for your furniture, you can always eat the meatballs to soothe your frustration.
The Culinary Science
Soaking bread in liquid creates what is known in culinary science as a panade. The starch traps moisture inside the meat proteins, preventing them from tightening up into dry, rubbery spheres.
