Chef's Notes
Treat your batter with respect! Rava loves to drink water, so do not panic when it thickens up during the resting phase. Keep the heat low and steady so the bread base cooks evenly without burning on the bottom.
Pro Tip
Want that restaurant-style crust? Make sure your pan is properly heated before pouring the batter, and always use a lid to trap the steam—it acts like a mini oven for melting your cheese to perfection!
Kitchen Catastrophe Warning
If you dump the eno into hot water or let the batter sit too long after adding it, all the precious bubbles will escape into the atmosphere, leaving you with a flat, rubbery disc of sadness.

Royal Court Comedy
Why wait hours for yeast to rise when you can just panic and use eno fruit salt instead?
The Culinary Science
Eno fruit salt contains sodium bicarbonate and citric acid. The moment it hits the moisture in your batter, a glorious chemical reaction releases carbon dioxide bubbles, giving you that instant, bakery-level rise without waiting hours for yeast!

Starch Retrogradation Reversal
Storage Science
Store at room temperature in a breathable bread bag or paper wrapper for up to 2 days. DO NOT refrigerate, as the cold accelerates starch retrogradation (staling). For long-term storage, freeze tightly wrapped.
Reheating Science
To reverse staling, flick a few drops of water onto the crust and reheat in a 350°F (175°C) oven for 5-8 minutes. The steam will re-gelatinize the starches, making the crumb soft and the crust crisp.
