Chef's Notes
Do not skip browning the chorizo and beef properly! That caramelized fond at the bottom of the skillet is where 50 percent of your flavor lives.
Pro Tip
Thaw your frozen corn slightly before tossing it into the skillet so it does not drop the pan temperature and make your lovely meat soggy.
Kitchen Catastrophe Warning
Dropping the entire heavy baking dish on your kitchen floor while pulling it out of the oven because you forgot your oven mitts and tried to be a hero.
The Jester's Corner
Royal Court Comedy
I asked the chef why the casserole was so heavy, and he replied that it was trying to weigh down the expectations of the royal court.
The Culinary Science
Rendering the fat from the chorizo releases fat-soluble capsaicin compounds from the spices, coating every single potato shred in pure flavor.
