Chef's Notes
Treat the dough like a delicate secret; knead it firmly but lovingly, ensuring the ghee is evenly distributed to achieve that quintessential sandy texture before baking.
Pro Tip
When roasting the baatis in the appe pan, maintain a low and steady flame. Rushing the process with high heat will burn the outside while leaving the interior raw and doughy.
Kitchen Catastrophe Warning
Leaving the baatis unattended on high heat, resulting in charred exterior cannonballs that could literally shatter a royal windowpane while remaining completely raw inside.
The Jester's Corner
Royal Court Comedy
The Jester says: If the baati is hard enough to break a tooth, simply claim it is 'authentic rustic tradition' and charge double.
The Culinary Science
Baking powder releases carbon dioxide when exposed to moisture and heat, creating tiny air pockets inside the dense wheat dough to keep the baatis from turning into cannonballs.
